Interview with Dominique Bouchet
A student and part of the team which elevated Robuchon's Jamin to legendary status, Bouchet brings 3 stars to every establishment he has ever worked in from the Hotel Crillon to the Tour D'Argent and now his first-ever private restaurant in Paris.
Bouchet: After 30 years I say I have a good experience in the Japanese couture, French couture,
my cooking it shows the many idea, Japanese idea, French idea, it’s good for my cooking, it’s a
good evolution for this time now.
Why Japanese? Why not Italian, why not Spanish, Chinese?
Bouchet: Because it’s very good procedure, very simple, very beautiful presentation, very good
taste, natural, I like Italian food, Chinese food, Spanish, Japanese good … this is my idea of the
very, very long time.
Bouchet: This is a really quiet place for people who want to come for business or just for family
for private party and the chef is cooking just in front of you like Tepanyaki system.
Bouchet: For me this is a good dream, I have a good experience with … very traditional feel … it
has a big history and French traditional too, but here, my dream with my Japanese experience and
the French because 20 years ago I visit between France and Japan, France, Japan.
Bouchet: A very French traditional history, it’s very important the respect the tradition this place is
my creation, this is here so I have good big liberty.
Bouchet: My cooking it change because I don’t use the cream and butter, I finish only olive wine,
just the product very good product and I cook very simple for me I think this is very good for this
Bouchet: I think with my staff and my guests, this place, two star no problem is we have two star
here because everyday fully booked, fully booked, it’s three star very important or the restaurant
fully booked, for me fully booked, not three star.
Bouchet: Many guests they can get Japanese … they visit many restaurants three star in Paris, the
last time, last dinner come here, after dinner after … wonderful, best restaurant in Paris, could …
we working together with … no superman movie no shi, shi.

Bouchet: Yes. Yes. Yes in Japan, 1991.
